  • Maria Hines’ Tilth Celebrates 10th Anniversary! 08.25.16

    Ten years ago Maria Hines opened Tilth — the groundbreaking, New American destination restaurant that was the second certified organic restaurant in the country. It quickly became nationally known, earning Maria a James Beard Award Best Chef Northwest along the way. Celebrate this Seattle culinary treasure with a 10-course Anniversary Dinner with wine pairings, September 1st or 2nd.

    Since its opening in September 2006, Tilth has upheld its commitment to serving certified organic, brightly-flavored New American fare and supporting local business along the way. The restaurant, in its first ten years, has received an abundance of rave reviews and accolades including the James Beard Award previously mentioned, being named one of the top 10 restaurants in the nation by Frank Bruni, food critic of the New York Times and appearances by Maria on Top Chef Masters, Martha Stewart and Iron Chef (she won!).

    Seattle Met captures the journey, achievements and more, writing of Tilth, “the revolution it helped ignite has changed things forever.” As Maria’s first restaurant, it propelled the farm-to-table movement in the northwest by highlighting important, local purveyors including farms, ranches and fishing vessels.

    Noted for calling out purveyors by name on the menu since the early days, the 10th Anniversary Menu is no exception. The 10-course menu features many of the long-time purveyors including King’s Garden Summer Melon Salad, Loki Seafood Salmon a la Plancha and Skagit River Ranch Braised Pork Belly.

    Sip and savor while reminiscing through a 15-page scrapbook profiling some of the producers that helped build Tilth’s outstanding first decade. It also showcases the most requested recipe, dishes that were staff favorites but just didn’t take in the dining room, and more!

    It’s a great weekend for a laugh, right? Parlor Live Seattle is making it easy to laugh, chuckle and smile this weekend during their grand opening! Beginning this weekend, and every weekend, Parlor Live Seattle will be bringing in urban and edgy national headline comedians to downtown Seattle. As the largest comedy-dedicated venue in Seattle, the room fits 400 people, but don’t wait to get your tickets as many shows have already sold out! Catch the lineup online and book your tickets for comedians such as Russell Peters, Jay Pharoah, Jeff Dye, John Witherspoon, Brian Posehn, Bill Bellamy and so many more!

    Add some comic relief this weekend with Kivi Rogers of “The Tonight Show” and “Everybody Loves Raymond,” performing tonight and tomorrow night.   • Rising Star Chef: Jason Brzozowy 05.30.13



    June’s Seattle Met magazine boasts a list of the city’s up and coming chefs. The talented chefs that help keep some of the city’s favorite kitchens on the “must” lists and are the right hands for notable and award-winning chefs. Among them, Jason Brzozowy of Maria Hines Restaurants. Uber talented and humble as can be, Jason is the executive chef for all three of Maria Hines’ restaurants – Tilth, Golden Beetle and Agrodolce.

  • Tilth Makes City’s List of 25 Best Restaurants 10.31.12

    After six years, Maria Hines’ Tilth is still making the list of best restaurants in Seattle!

    No easy feat, Maria and her staff at Tilth continue to create, cook and challenge themselves to be on the edge of the culinary envelope. Keeping guests and critics happy along the way and maintaining itself as a dining destination for travels to the Pacific  Northwest, Tilth “just keeps getting better.”

  • Coastal Kitchen Reopens with Oyster Bar 10.22.12



    One of Capitol Hill’s favorite mainstays reopened this past weekend after a four-week closure. Coastal Kitchen, the 20 year favorite for breakfast, lunch and dinner, underwent construction that had crews putting in a new oyster bar for bivalve fans, building a new cocktail bar for the over 21 crowd, and installing new bamboo flooring and other details in the rest of the dining room.

    A new menu launch beckoned longtime Coastal Kitchen diners and attracted new guests. New executive chef Jason Jones brings a wealth of experience to Coastal with sustainable seafood and other new favorites for breakfast, lunch, dinner and late night seven days a week.

    For any oyster fanatics, count on at least four different oysters on the half shell daily, including the Two Buck Shuck, a chef’s choice of one variety of oyster for just $2 all day.

  • End your week with an award-winning cocktail, tonight only 09.09.11



    Have you ever had an award-winning cocktail? How about one with cumin, carrots, egg whites and gin? One of the bartending industry’s most prestigious cocktail competitions took place on August 23 with a state-wide search for “The Most Inspired Bartender” competition. The winner was Milagro Cantina and Hector’s own Mark Sexauer with his inspired cocktail, The Forager.

    The fun doesn’t end there. Mark is taking The Forager to Las Vegas this weekend to compete against 46 other bartenders from around the country for the national title of “The Most Inspired Bartender.” The winner doesn’t just walk away with the title, but will also walk away with the cover of an upcoming GQ magazine (after all, it’s their competition along with the United States Bartenders Guild) and fly to London for the international competition.

    How you can join the fun? Mark will be shaking up The Forager TONIGHT ONLY at Milagro Cantina. Taste how creative and balanced a cocktail can be and, as 425 Magazine puts it, “support your local bartender!” And why not? It’s a gorgeous day for a Forager.
