  • Tilth Celebrates 11 Years This Weekend 08.31.17

    Tilth is Maria Hines’ first restaurant, which opened in the Wallingford neighborhood of Seattle in September 2006. With a long standing commitment to seasonal and organic products, the bounty of the Northwest allows her to be inspired by the culinary resources available. Maria has spent over a decade immersing herself in New American cuisine prepared with certified-organic and wild ingredients, sourced from as many local farmers as they’re able to support.

     



    With nods of recognition throughout Tilth’s journey, including James Beard Award Best Northwest Chef and a coveted spot on Frank Bruni’s New York Times list of best new restaurants in the country, it’s time to celebrate their 11 year mark! 11 years of serving up beautiful, delicious, and award-winning certified organic cuisine.

     

    As a thank you to those who have made Tilth successful over the years, guests are invited to partake in a celebration of summer with a specially designed 8-course Grand Tasting menu with wine pairings, available September 1-3 2017. This special menu includes:

  • Maria Hines’ Tilth Celebrates 10th Anniversary! 08.25.16

    Ten years ago Maria Hines opened Tilth — the groundbreaking, New American destination restaurant that was the second certified organic restaurant in the country. It quickly became nationally known, earning Maria a James Beard Award Best Chef Northwest along the way. Celebrate this Seattle culinary treasure with a 10-course Anniversary Dinner with wine pairings, September 1st or 2nd.

    Since its opening in September 2006, Tilth has upheld its commitment to serving certified organic, brightly-flavored New American fare and supporting local business along the way. The restaurant, in its first ten years, has received an abundance of rave reviews and accolades including the James Beard Award previously mentioned, being named one of the top 10 restaurants in the nation by Frank Bruni, food critic of the New York Times and appearances by Maria on Top Chef Masters, Martha Stewart and Iron Chef (she won!).

    Seattle Met captures the journey, achievements and more, writing of Tilth, “the revolution it helped ignite has changed things forever.” As Maria’s first restaurant, it propelled the farm-to-table movement in the northwest by highlighting important, local purveyors including farms, ranches and fishing vessels.

    Noted for calling out purveyors by name on the menu since the early days, the 10th Anniversary Menu is no exception. The 10-course menu features many of the long-time purveyors including King’s Garden Summer Melon Salad, Loki Seafood Salmon a la Plancha and Skagit River Ranch Braised Pork Belly.

    With Mother’s day approaching, Seattle and Bellevue’s favorite food spots are gearing up to celebrate motherhood and thank moms for all they do with holiday brunch, dinner, cocktails, and cooking classes.

    This Mother’s Day, skip morning brunch and take Mom to indulge in a three-course dinner at Eden Hill, a deliciously innovative New American restaurant in Queen Anne. Chef Maximillian Petty has crafted a special prix fixe menu only for Mother’s Day for $45 per guest with an optional wine pairing for $20 per guest.

     

    With two options under each course, Eden Hill’s Mother’s Day menu includes:

    Beef Tartare with poached egg yolk, caper, pickled onion, sourdough and mustard

    Halibut Cheek with wild garlic chimichurri, lemongrass and roasted salsify

    Dark Chocolate Sorbet with orange mint marshmallow and toasted faro graham cracker

    From 10 a.m. to 3 p.m. the Boathouse will be serving some of their best-selling appetizers, spring salads and seasonal entrées along with special a la carte brunch items. From 3 p.m. to 9 p.m., treat mom to the Boathouse’s excellent dinner menu with Roasted Sablefish in Sake Kasu, Sautéed Garlic Prawn Yakisoba, Butter Poached Maine Lobster, and a glass of her favorite wine.

    The Café will be offering their grand holiday buffet with an impressive selection of seasonal appetizers, salads, entrées and decadent desserts as well as Ray’s traditional Carving and Shellfish stations with options of Roasted RR Ranch Prime Rib, Snow Crab Legs, and Oysters on the half shell. There will also be breakfast and brunch items like Eggs Benedict, Brioche French toast, and Uli’s breakfast sausage. The Café Buffet starts at 9 a.m. with the last seating at 2 p.m. The Buffet is $55 per guest, $25 for children ages five to 11. Children under age five dine free. From 3 p.m. to 9:30 p.m. guests can enjoy the traditional Café dinner menu with Grilled King Salmon, Dungeness Crab Cakes, Seared Scallops, and more.

Whether you want to treat mom to breakfast in bed or indulge her hobby of cooking with a cooking class, Whisk has several options that are a perfect fit for every mom.

     

    The Perfect Brunch, April 30- A hands-on class where students will learn techniques for creating a tasty mix of both sweet and savory dishes perfect for “wow”-ing mom on Mother’s Day. Guests can expect to learn how to create Applewood Smoked bacon and Kale Frittatas, Thyme Asiago Potato Stacks and more. The course runs from 11 a.m. to 2 p.m. and costs $95 per person.

     

    Make Mom Breakfast (8 years+), May 1- Learn how to make Mom a breakfast she’ll never forget this Mother’s Day. Students will practice knife skills as they learn to make a Fresh Fruit Salad, Carrot and Walnut Muffins, Home-made Granola and more. The course runs from 11 a.m. to 1:30 p.m. and costs $95 for one adult and one child eight years or older.

     

    Afternoon Tea- Mommy and Me (8 years+), May 8- What better way to spend Mother’s Day than learning to bake delightful old-fashioned tea party goodies? In this hands-on class, cookbook author, Gill Dey, will teach guests how to make elegant Salmon Pinwheel Sandwiches, light Fresh Cream Scones and more. The course runs from 1:30 p.m. to 3 p.m. and costs $75 for one adult and one child eight years or older.

     

    The Mother’s Day Three-Course Dinner, May 8- Treat Mom to a cooking class at Whisk and learn to make a restaurant-quality three-course dinner together with the help of chef Aaron Tekulve, a recent contestant on Chopped . Students will learn how to create
    Chinook Salmon with baby fennel, asparagus, morels and lemon crème fraiche and more. This course runs from 5 p.m. to 8 p.m. and costs $110 per person.

    Rooted in the culinary styles of the Mediterranean and using the best organic and seasonal ingredients, Golden Beetle is a one-of-a-kind location for this year’s Mother’s Day festivities.

     

    Start the celebration early with a Garden Party Cocktail Class on Saturday, May 7, 1:30 p.m. to 3:30 p.m. For $75 per person, guests can enjoy their own garden-themed cocktail class with light snacks provided by Golden Beetle. Cocktails will focus on what’s fresh from the local Farmers Market this spring, such as a berry mojito, lemon verbena martini, and a rhubarb cocktail.

     

    On May 8, from 10 a.m. to 3 p.m., a bright and bold three-course Mother’s Day brunch menu created by award-winning chef Maria Hines will be featured for $25 per person. Options include:

     

    House-made Yogurt with Fruit with honey, mint and walnut

    Spring Onion and Asparagus Scramble with romesco puree, white cheddar and beef-fat fried potato

    Spiced Donuts with honey syrup, cardamom and cinnamon

    The special menu offers hearty and healthy options including:

    Spring Onion Zeppoli with zucchini and preserved lemon yogurt

    Aspen Hollow Lamb Sausage Hash with asparagus, morels and a sunny-side up egg

    Larambraten, a beer-braised lamb dish, shredded and pressed with a pretzel crumb coating before it’s flash-fried and set atop a fresh pea and bacon salad

    This month’s Edible Seattle tells the story of Eiko and George Vojkovich of Skagit River Ranch and their quest to breed the best beef. Their long journey brought organic, grass-fed Wagyu beef to the tables of Tilth, where Chef Maria Hines served it to guests, and then took it to the James Beard Foundation’s sustainability conference last October!

    Pick up the issue on newsstands now through the end of February. Keep your eyes peeled for the Wagyu’s return to the Tilth menu, soon!
